Can you help with our 7 course menu?

Hi, I’m in culinary school and am planing a menu for a 7 course meal final exam. I was looking for a little guidance on a couple of courses (I’ll mark with a * and ask at the end) and for your opinion on the menu thus far. The theme of the menu is “A guy’s night out”

Canapé – mini sausage and pepperoni pizza Canapé
Appetizer – glazed grilled shrimp*1
Soup – Hearty Loaded Potato Soup
Salad – Chopped Salad*2
Intermezzo – Corona and Lime sorbet
Entrée – pan seared tenderloin steak served with Pommes Anna, fried Leeks, and monkey gland sauce
Dessert – Bread Pudding with bourbon sauce

*1- we are having a hard time coming up with a glaze any ideas would be appreciated

*2- Looking for a basic chopped salad recipe

Some ideas for a glaze:

Ing:
1/2 cup firmly packed brown sugar
8 tablespoons butter, cut up
1/2 cup dark rum
4 tablespoons Dijon-style mustard
2 cloves garlic, minced
1 tablespoon white vinegar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon black pepper, or more to taste
1/8 teaspoon salt

Place all ingredients in a saucepan and bring to a boil over high heat. Reduce the heat to a simmer and continue to cook until the mixture is thick and syrupy, about 3 to 5 minutes. Adjust seasoning, adding salt and pepper as necessary.

Ing:
1/3 cup Lime Juice
1/2 cup Honey
1 tsp freshly ground white pepper, or to taste
1/2 tsp sea salt

Combine ingredients, brush on shrimp while grilling.

1 cup apricot jam
1/2 cup olive oil
1/3 cup balsamic vinegar
1/4 teaspoon salt
Fresh ground pepper to taste (about 10 to 15 grinds)
1/2 teaspoon garlic powder
1/4 teaspoon cumin
1/4 teaspoon chili powder
1/4 teaspoon thyme (dried preferred)
1/4 teaspoon onion powder

Heat just to boiling. Reduce heat and simmer for 15 minutes. Brush on shrimp while grilling.

Chopped salad ideas:

Ing:
* Salad Ingredients:
* 1 lg head chopped romaine lettuce
* 1/2 cup salami, chopped into 1/4 inch cubes
* 1/2 cup mozzarella, chopped into 1/4 inch cubes
* 2 Roma tomatoes, chopped
* 1 small red onion, chopped
* 1/4 cup pepperoncini peppers, chopped
* 1 small can garbanzo beans
* 1 small can sliced kalamata or black olives, drained
* 1/2 tsp each salt; pepper
* 1/2 tsp dry oregano
*
* Balsamic dressing:
* 1 clove garlic, peeled
* 1/2 tsp salt
* 1/2 cup balsamic vinegar
* 1 shallot, minced
* 1 tsp dijon mustard
* 1/2 tsp black pepper
* 1/2 tsp oregano
* 3/4 cup olive oil

Salad Dressing: Combine all except the olive oil in blender for 30 seconds. While continuing to blend, pour olive oil slowly through blender lid until dressing is thick and creamy. Refrigerate in a container until serving time.
Salad: Put chopped lettuce into a medium salad bowl. Add all other chopped ingredients on top as well as the garbanzos and olives. Sprinkle with salt, pepper and oregano and serve with balsamic dressing.

* 1 large head romaine lettuce
* Italian salad dressing
* 2 hard-cooked eggs, sliced or chopped
* 1 can (2 oz.) sliced black olives, drained
* 6 to 8 fresh mushrooms, sliced
* 2 green onions, thinly sliced
* 1/4 cup chopped walnuts or toasted sunflower seeds

Toss together and serve. :)

Any/all of these veggies cut into bite-sized pieces or chopped:
cabbage
red cabbage
broccoli
cauliflower
radishes
carrots
cucumbers
red bell peppers
celery
jicama
turnip

Optional additions:
grated cheese
peanuts
sunflower seeds
hard-boiled egg
olives

Toss with a creamy dressing (ranch, creamy Italian, Bleu Cheese….etcetera).

All of these serve about 4, so think of that when making the recipes. They all double very well. Good luck on your exam! :)
